PB, Banana, and Coconut Cookies

Ingredients.

  • 3 Ripe Bananas
  • 1/2 cup All Natural Peanut Butter (two or less ingredients in pb)
  • 1/4 cup canola oil
  • 1 tsp vanilla extract
  • 2 cups Dry Oats
  • 1/3 cup Bobs Red Mill unsweetened shredded desiccated coconut (or you can use unsweetened coconut flakes)
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • 1 cup dark chocolate chips (I also threw in a few pb chips as well)
  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper or spray with cooking spray.
  3. In a large bowl, mash bananas, peanut butter, canola oil and vanilla extract together until smooth.
  4. In a separate bowl, combine oats, baking powder, coconut and cinnamon.
  5. Slowly add dry ingredients into the banana mixture and stir until everything is combined.
  6. Fold in chocolate chips
  7. Place tablespoon sized balls of dough onto cookie sheet and bake 10 – 12 minutes, until cookies are slightly golden.
  8. Let cool on baking sheet for 5 minutes, then transfer to cooling rack to cool completely.

Protein Cupcakes!

Dark Chocolate Coconut Protein Cupcakes.

  • 2 scoops Vanilla Sunwarrior Protein Powder
  • 1/4 cup Coconut Flour
  • 3 Tbsp unsweetened shredded coconut
  • 1/4 cup dark chocolate chips (or more Smile)
  • 1 tsp baking soda
  • dash of cinnamon
  • 3 egg whites
  • 2 Tbsp Agave Nectar
  • 2 Tbsp coconut extract
  • 1/4 cup unsweetened vanilla coconut almond milk

Pour ingredients into greased cupcake pan and bake for about 15 minutes at 350 degrees.

Frosting

  • 2 Tbsp + 1 tsp Organic Crunchy Peanut Butter
  • 3 Tablespoons plain Fage 0% Greek yogurt
  • 1 packet of Stevia in the Raw.

Shower with cinnamon, an additional dark chocolate chip, and enjoy!

FULL time Trainer

I am a Personal trainer who cannot say “no” to the smell of a burger, or desserts that look like this.

If you workout regularly and eat healthy 90% of the time like I do, then you shouldn’t feel guilty when you’ve eaten too much, or “cheated” on your diet.

What’s done is done, don’t dwell on it. Today is a new day to start fresh.

Get yourself back on track by eating clean, and making it a priority to get your workout inBy the end of the day, you will forget all about that oh so delicious slice of pie Smile.

Unless it’s still in your fridge, and in that case, throw it away immediately!

We headed over to the lake in Wakefield yesterday evening to walk around, listen to music and watch the fireworks. .

They ended just as a thunderstorm began to roll in at a rapid pace. It was cool to watch a battle unfold between the colorful explosions and crazy zig-zaging lightning in the sky.

Unsafe..but cool

Matt and I were on his motorcycle, and I luckily only got pelted in the face with a few quarter sized rain drops on the way home.

This morning’s breakfast was similar to yesterday’s “Crumbled blueberry muffin”, however  this time I decided to scramble it at the end to make the consistency a bit more “oatmeal-ish”

  • 1.5 Tbsp organic coconut flour
  • 3/4 cup liquid egg whites
  • 1/4 cup water
  • 1/2 sliced banana
  • blueberries
  • cinnamon and a few drops of liquid Stevia

cooked for 5 minutes in the microwave and scrambled with a spoon at the end.

It was good!, and kept me full all morning.

I just finished my pre-workout snack of Greek yogurt, chia seeds, raw almond butter and blueberries, and will soon be on my way to the gym for a workout.

Today’s routine:

Cardio: 10 minute Incline walk. 20 minute Stair Mill. 20 Minute Elliptical.

Abs: 

  • 10 stability ball rollouts.
  • 10 plank knee twists (per side).
  • 10 mountain climbers.
  • 10 second plank with right leg lifted.
  • 10 second plank with left leg lifted.
  • 10 second plank.

      repeat 3-5x

Tomorrow is already Friday, and it looks like another HOT weekend ahead!

A Cake and a Smoothie

Six years ago, when Matt turned 20, he told me that his favorite type of cake was; “confetti cake with chocolate frosting”.

Six years later, that is still what I bake for him on his birthday, and this year was no different.

When it comes to cake, to me, the frosting is the best part of the whole experience.

In fact, I’d take a container full of creamy chocolate frosting over the cake any day!

Especially chocolate fudge frosting, which is what I used today.

It took some will power to keep the spatula aimed towards the cake instead of at my mouth.

While I waited for the cake to cool, I completed day 3 of Insanity and let me tell you, my calves are SO ANGRY!

My body is definitely responding to the workouts, and it’s a whole new level of “hardcore training”. No matter how in shape you think you are, he will  have you sweating buckets all over the floor.

But you feel so good when your done!

I replenished my shaking muscles with a green smoothie, topped with Kashi and some fresh blueberries

My nose has a permanent scent of sweets stuck inside from all of the baking these past few days.

And batch #1 of my Healthy(er) Cake Batter Brownies that are ready to be consumed.

  • 1 box of chocolate cake mix
  • 2 Tbsps. canola oil and 2 Tbsps. unsweetened applesauce
  • 1 flax egg ( 1 Tbsp ground flax + 3 Tbsps. water.) Let sit for a few minutes to gel)
  • 1/3 cup fat free skim milk
  • 3/4 cup organic chocolate chips

Pre-Baked

Baked at 350 for 20 minutes. Cooled for 25-30 minutes in pan

My heart almost skipped a beat when I saw my version of Heaven on a stick sitting in my grocer’s freezer.
